Fava Bean & Dry Jack Toasts



FAVA BEAN & DRY JACK TOASTS
Makes 2 dozen
 
2 lb fresh fava beans, shucked from pods (1 ¾ c)
1 T extra-virgin olive oil
1 T fresh mint, chopped
2 t fresh lemon juice
Kosher salt & pepper
Toasts
Dry jack cheese, shaved
 
Boil the favas 5 min. Drain & rinse in cold water. Peel outer skin off beans & discard. Set aside 3 T beans. Place remaining favas, mint, oil & lemon juice in food processor and pulse to a chunky paste. Transfer to a bowl and taste for seasoning. Spread 1 t of fava paste onto each crostini. Garnish with a whole fava and shavings of Dry Jack cheese. Sprinkle with freshly ground pepper and serve. Enjoy with DeLoach Vineyards Chardonnay.
