Chicken Lettuce Wraps
CHICKEN LETTUCE WRAPS
Serves 2
1 t olive oil
1 t garlic, minced
2 T lemongrass stock
6 oz chicken breast, minced
¼ c unsalted, roasted peanuts
2 T fish sauce
2 T fresh lime juice
¼ c red onion, sliced
3 T scallion, finely diced
2 T ginger, peeled & minced
2 T cilantro, chopped
½ t red pepper flakes
1 head iceberg or romaine, washed & dried
Saute garlic in oil & set aside. Pour stock in a skillet and set over medium heat for one minute add chicken and stir for 1-2 minutes until chicken is cooked and stock is evaporated. Remove from heat and add ingredients except lettuce. Separate lettuce leaves and arrange on a platter with chicken mixture. To serve, have diner scoop chicken onto leaf and fold over like a cigar. Serve with DeLoach Chardonnay.
