Summer Watermelon, Orange & Watercress Salad



SUMMER WATERMELON, ORANGE & WATERCRESS SALAD
Serves 6
 
6 c watercress or garden cress, trimmed
4 c cubed watermelon, seeds removed
3 large oranges, segmented
 
1/3 c scallions, white & tender green, very thinly sliced
1/4 c flat leaf parsley, minced
1/2 pint fresh raspberries
1/4 c walnut or pecan pieces, toasted
 
RASPBERRY-ORANGE VINAIGRETTE
Makes 1 cup
 
1/4 c raspberry vinegar
1/3 c olive oil
1/2 c canola oil
4 T walnut oil
1 t prepared Dijon mustard
juice of 1 orange
1 t honey
kosher salt & pepper to taste
 
Whisk ingredients together until emulsified.
 
Lightly mix together watercress, watermelon, scallions & parsley. Toss with dressing and mound in center of plates. Garnish with nuts and raspberries and serve with De Loach Rosé.
