Carmelized Garlic Risotto



CARAMELIZED GARLIC RISOTTO
Serves 6
 
24 garlic cloves, unpeeled
2 T olive oil
 
3 T unsalted butter
1 onion minced
1 1/2 cups Arborio rice
1/2 cup De Loach Vineyards Chardonnay
5 cups chicken stock
1/2 chopped chives or scallions
 
Preheat oven to 350 F. Bring medium saucepan of water to boil. Add garlic and cook 30 seconds. Drain. Repeat, using fresh water. Drain & peel.   Transfer to baking sheet. Drizzle with 1T oil & bake 20 minutes until tender. Cool & finely chop. 
 
Melt butter with oil in heavy skillet over med-high heat. Add onion & sauté 5 minutes. Add rice and stir 1 minute, add white wine and simmer until liquid is absorbed. Add chicken stock, one cup at a time, stirring until liquid is absorbed. Simmer until rice is tender & mixture is creamy. Stir in chives. Serve immediately with DeLoach Vineyards Pinot Noir.
