![]() In the far southwest corner of the Russian River Valley appellation at an old stage coach stop, the Hawk Hill vineyard hangs onto a steep south-facing hillside, bathed by regular fog cycles and coastal wind flowing in through the Freestone gap. Grapevines struggle to ripen their fruit at such a cool site, but meticulous viticulture practices and patience are rewarded with an opulent range of flavors and impressive complexity from the long hang time. Yet minerality and acidity are preserved in this climate, deftly complementing the richness captured from our winemaking techniques. These clone 5 grapes were hand picked, sorted, whole-cluster pressed and barrel fermented with the Montrachet yeast strain. Delicate aromas of sun-dried Fuji apples lift from the glass to join herbal notes of cypress and crushed seashell minerality. The flavors of the tightly wound core evolve with dimensions of grapefruit zest, pear and light cobbler pastry laced with hints of buttercream and honey for a lush weight to the palate. |
