 Hand-harvested from select Chardonnay vineyards in the Russian River Valley, a portion of the fruit for our O.F.S. Chardonnay is whole cluster pressed while the balance is crushed before pressing. The juice is allowed to settle in stainless steel tanks, and then is racked into French oak barrels. Some lots ferment with wild yeast or go through wild malolactic fermentation, while others are carefully inoculated with yeast strains selected for premium Chardonnay wine. After the wine has been aged sur lies for nine months, only the finest barrels receive the distinction of becoming De Loach O.F.S. Chardonnay. The 2007 Selection has a bouquet that incorporates tropical aromatics along with citrus and floral notes. On the palate, the richness of the sur lie aged wine is joined by the raciness and expressiveness of the stainless steel portion to bring balance and length. This wine is to be enjoyed today, tomorrow and for several years to come. |
